Why is my wine cooler not holding temperature?
Short answer
Two things damage a collection and they have separate causes: temperature drift and vibration.
What is actually going on
For drift, take the reading among the bottles rather than off the panel, because a front panel can report an ideal number all season while the cabinet behind it sits several degrees over. On a dual-zone unit the comparison does the diagnosis for you: the zone that is behaving vouches for the sealed system, and whatever has failed belongs to the drifting zone alone: its evaporator, its fan or its damper. For vibration, the source is almost always the condenser fan or the compressor mounts, and in a column built into a run of millwork the cabinetry passes it straight through to the racks.
What we check, and in what order
Vibration is the complaint people do not think to make. It shows on no display, and the only way it announces itself is a faint hum in the bottles while the compressor runs. The usual sources are a condenser fan blade out of balance, a fan bearing on its way out, or compressor mounting grommets that have gone hard with age and stopped isolating anything. A freestanding cabinet standing on a tile floor telegraphs far less than an integrated column screwed into a millwork run, because the millwork is a much better sounding board. The repair is a small one, and on a cellar that has been laid down for years it is not cosmetic.
Ambient temperature around the cabinet explains more of these calls than any component does. Wine storage gets built into the warmest cabinetry in the house: an island, a bar wall, a dining room millwork run, or an outdoor kitchen. Inland, in Escondido, Poway, Rancho Bernardo or Fallbrook, a room that runs cool overnight and hot by four is asking the cabinet to keep a two-degree band while the target underneath it moves, and the shelf furthest from the evaporator is where that shows up first. Nothing in that unit is broken. It has been asked for something it cannot do, and the answer is airflow and installation rather than parts.

How likely is it that the repair finishes on the first visit?
Good. Common Sub-Zero and Wolf failure parts ride as van stock: evaporator and condenser fan motors, defrost heaters and termination thermostats, thermistors, door gaskets, igniters and ice maker components. Anything outside that is OEM Sub-Zero or from an authorized supplier, named and priced before it is ordered. The model and serial number is what moves a job from two visits to one.
Is the work backed by anything, and what parts do you fit?
Most repairs carry a one-year warranty on parts and a two-year warranty on labor. Parts are OEM Sub-Zero, or from authorized suppliers when the factory part is unavailable, so the appliance stays at factory specification. If it is still inside its manufacturer warranty, call Sub-Zero, Wolf or Viking and use the coverage you paid for, since sealed-system cover depends on who does the work.
